Sorbet is a frozen dessert made from sweetened water flavoured with fruit puree, juice or liqueur. Unlike ice cream, sorbet contains no dairy and no copiously whipped-in air - which makes for a dense and extremely flavourful product that stands apart from anything mass-produced.
Our homemade sorbet is traditionally prepared in the same way as our gelato - churned at slower speeds to incorporate less air. That lower air content is what gives it the intense flavours, smooth consistency and elastic texture that distinguishes a quality sorbet from the rest.
